Section 81-2,272.19
Frozen foods; temperature requirements.

Stored frozen foods shall be maintained frozen. Frozen potentially hazardous food that is slacked to moderate the temperature shall be held under refrigeration that maintains the food temperature at:

(1) Forty-five degrees Fahrenheit (seven degrees Celsius) or below if the food is to be consumed within four calendar days;

(2) Forty-one degrees Fahrenheit (five degrees Celsius) or below if the food is not to be consumed within four calendar days; or

(3) Any temperature if the food remains frozen.
