TITLE 17 FOOD AND DRUGS
Chapter 17.07. FLOUR AND BREAD STANDARDS
Sec. 17.07.010. REQUIRED VITAMIN AND MINERAL CONTENT OF FLOUR.

A person may not manufacture, mix, compound, sell or offer for sale flour for human consumption in the state unless each pound of flour contains the following vitamins and minerals: (1) not less than 2.0 mg and not more than 2.5 mg of thiamine; (2) not less than 1.2 mg and not more than 1.5 mg of riboflavin; (3) not less than 16.0 mg and not more than 20.0 mg of niacin or niacinamide; (4) not less than 13.0 mg and not more than 16.5 mg of iron (Fe). Self-rising flour shall contain in addition to these ingredients not less than 500 mg and not more than 1500 mg of calcium (Ca).
